As an international student, living abroad far away from family is not easy when it comes to cook for yourself. But what you need is to step back and think about it, you will find it easy to cook like a chef.

To cook like a MasterChef is going to be a series that I am starting today. The reason behind the ”cook like a MasterChef” series is that I know many students find it hard to cook for themselves or find it impossible mission to be done. But I would say, no, take it easy. It is just a simple, enjoyable, and yummy process and give it a try!

The easiest meal that you could ever do is to cook soup or salad. Talking about soup because the weather in Sweden is getting cold and it is also cheap, so I would say it works for a friendly student budget, so I think this is the right time to start with making it. Few ingredients at the beginning would be enough to produce a hot and yummy (soup) meal. I would start this series by cooking ”lintel soup”.

To make this lentil soup recipe, you will need the following ingredients:

Veggies: A simple mix of white onion, carrots, and garlic.
Veggie stock: Or you could also use chicken stock if that’s what you have on hand, or even you can only use water.
Red lentils: Which I love for this soup because they break down and puree easily (but in Egypt, we call it yellow lentils).
Spices: A cozy mix of ground cumin, curry powder, cayenne (optional, if you like it spicy).
Salt and black pepper: For seasoning, as always.
One spoon of oil.

HOW TO MAKE LENTIL SOUP:

  • I really recommend taking an extra few minutes to sauté the onion, carrots and garlic before adding the stock or water.
  • Stir in the vegetable stock, lentils, cumin, curry powder, salt, black pepper, and cayenne until combined, Cover and cook on the stovetop until the lentils are tender.
  • Using either a hand blender or traditional blending,  or you can always use a fork or any hand tool to puree the soup until it reaches your desired consistency.
  • Season the soup with a few generous pinches of salt and pepper, as needed.
  • Serve warm with blain or garlic bread.
  • you can add yoghurt or fresh cream on the top when you serve it as you wish.

And enjoy your easy meal!
